Easter Delicacies: Basmati Rice And Shawarma Recipes.




The Easter celebration is drawing near. Aside the purpose for which it's being celebrated which is Jesus, it's a time for so many people to rest and indulge in different mouth watering delicacies. Here are some Easter menu suggestions for you.

Home made Shawarma. This is a Lebanese fast food snack that is pretty popular in Nigeria now.

INGREDIENTS:
3 wraps of Lebanese bread
For Chicken Shawarma
A little bit of crisp vegetables- cabbage, tomatoes, onion rings, carrots
100g Smoked/Grilled/ Roasted skinless chicken or beef
For Beef Shawarma
A little bit of crisp lettuce, tomatoes, pickles and onion rings
100g Smoked/ Grilled/ Roasted skinless chicken or beef
FOR THE SAUCE
Usually Tahina sauce + few drops of lemon juice + water OR Yoghurt and garlic sauce mix OR Mayonnaise and garlic sauce mix or 4 tbsp of Salad cream + 2 tbsp of Mustard +2 tbsp of Tabasco sauce

Directions
Lay the bread wrap on a clean surface
Nicely arrange the vegetables and chicken at one edge
Garnish with a little of the sauces available
Fold the wrap from there to the other end
Put under a sandwich toaster for about 1 minute (optional)
Remove from heat and serve



Basmati rice. Basmati rice is a unique species of long grain rice originating from India. Basmati rice has its unique aroma different from the regular rice grains. It also contains more fiber than other rice grains. The brown basmati rice is said to be more superior than the white one.
INGREDIENTS:


4 cups cooked rice or 1 cup uncooked rice
1 cup frozen peas, thawed
2 tablespoons carrots, finely diced
2 eggs, beaten
1/2 cup onion, diced
1 1/2 tablespoons butter
2 tablespoons soy sauce
salt
pepper



Directions:
Cook rice following instructions on package (Bring 2 cups water to a boil, add rice and a dash of salt, reduce heat and simmer in covered saucepan for 20 minutes).
Pour rice into a large bowl to let it cool in the refrigerator.
Scramble the eggs in a small pan over medium heat.
Separate the scrambled chunks of egg into small pea-size bits while cooking.
When rice has cooled to near room temperature, add peas, grated carrot, scrambled egg and diced onion to the bowl.
Carefully toss all of the ingredients together.
Melt butter in a large frying pan over medium/high heat.
When butter has completely melted, dump the bowl of rice and other ingredients into the pan and add soy sauce plus a dash of salt and pepper.
Cook rice for 6-8 minutes over heat, stirring often.
